Spinach and carrot pancakes by Anne Marie Lambert

The wonderful Anne Marie Lambert shared recipes and tips at the 2018 Rugby Food and Drink Festival pop-up kitchen. Here's one of her great recipes.

Anne Marie Rugby Food Festival

 

Ingredients

75g carrots

1 onion75g spinach

2 green chillies

1tsp fennel

1 tbsp ground coriander

100g gram flour

50g semolina

1tsp baking powder

300ml water

2tbsp vegetable oil

1/2tsp salt

Method

In a large bowl mix together the carrots, spinach, onion, chillies, fennel seeds and coriander. Season with salt and set aside.

Mix together the gram flour, semolina and baking powder and add to the carrot mixture.

Add the water gradually to the mixture mixing well with a spoon until ou have a thick batter.

Lightly oil a frying pan. When hot, add 2tbsp of the mixture and spread with a sptula to make a pancake about 18cm (7in) in diameter. Cook for 1-2 mins or until the pancake is lightly browned then turn over to cook for a further 1-2 mins. 

Repeat with remaining batter to make 6 large pancakes or 8-10 smaller ones.

Serve hot or cold.
